PERUVIAN

This season Chameleon is a Peruvian pop up featuring a collaboration with Chef Nilo Do Carmo Castro. Authentic, classic Peruvian cuisine that honors the traditions of Peru’s diverse food culture. A collection of dishes that represent Peru’s broad cultural influences from Africa, China, Japan, Spain and Inca culture. We utilize authentic ingredients such as Chicha de Jora and Aji Limon peppers, in addition to some “secrets” we have gleaned from our Chef friends in Peru.

AMIRA

MIDDLE EASTERN

     Amira honors the traditional technique and flavor of the Persian gulf. We focus on sourcing local produce, and rotating, seasonal menus that feature home cooked meals, popular Lebanese shawarmas, and shareable dishes.

AMALFI

ITALIAN

    Modern and contemporary Italian cuisine that specializes in scratch made pastas, hand tossed pizzas with house-made mozzarella, seasonal salads, and a rotating menu of regional Italian specialties.

CHIANG MAI

      Our goal is to create authentic Thai dishes inspired by Northern & Central Thailand. We import traditional ingredients from Thailand and Central Asia and make everything fresh in house. Gin khao reu yang?

     A mix of classic American dishes brought to life in fresh ways, with a special focus on sandwiches, salads and vegetables forward dishes. We are heavily influenced by the food of the Southern United States. Our goal is to make creativity & sustainability more approachable and delicious.

     Globally inspired scratch made pastries & desserts.  Our house specialties are Vanilla Bean French Crullers, Mexican Flan Cakes, and Turkish Basbousa.

SHANGHAI MOON

CHINESE

     China has one of the oldest, most diverse and most interesting food cultures in the history of the world. Shanghai Moon is a collection of dishes from the streets of Shanghai, Taipei, Hong Kong, as well as regional dishes from Sichuan, Yunnan, Hainan & Xinjiang. 

CRUZ

CONTEMPORARY MEXICAN

Cruz is a collaboration between James Beard nominated chef, Manny Barella, and Boulder veteran chef Sarah Beckwith.  Cruz is an exploration of unique, authentic Mexican dishes such as griddled corn truffle tacos, roasted chile relleno, and torta alambre.
